Step inside the H. Rault Biscuit Factory in Ville Noire, where traditional Mauritian cassava biscuits have been made for nearly 150 years.

For nearly 150 years, the H. Rault Biscuit Factory in Ville Noire has preserved one of Mauritius’ most distinctive culinary traditions: the handmade production of cassava biscuits.

The story began with Hilarion Rault, who set out to recreate traditional Breton biscuits using ingredients available locally. His experiments led to a unique cassava-based recipe that gradually became part of Mauritius’ culinary heritage.

The original production method is still followed today. Inside this charming, small-scale factory, every stage reflects skills passed down through generations and a deep respect for traditional craftsmanship.

Travel-Îles steps inside the H. Rault Biscuit Factory to explore the story behind these iconic Mauritian cassava biscuits, whose delicate texture and distinctive flavours evoke the island’s past.

A delicious journey into a place where time seems to have stood still, and where one of Mauritius’ most treasured recipes continues to live on.
